In France, beginning with bonjour is part of the interaction. Do not jump straight to the order.

When you do not understand
Use a calm repair phrase: Vous pouvez répéter, s'il vous plaît ? Can you repeat, please?

Merci, bonne journée. Thank you, have a good day. This closing phrase is small but very natural.
Practice the whole rhythm: greeting, order, please, thank you, goodbye. That rhythm matters as much as the vocabulary.
